Itching to veer away from the generational profession – and perhaps born “out of revenge”, he quips, for being made to work in the factory rather than play soccer with his friends – Zanellato began cooking. He moved to London as a teenager, where he worked in fine dining and Michelin starred kitchens, before landing in Australia in 2002.
